Day 10 of Whole30, second day of school, meatloaf for dinner! Does it get any better than this???
Breakfast for the fam this morning was a simple and scrumptious pineapple scramble. First I wilted some fresh spinach, added 6 eggs and scrambled. Easy, huh?
When the eggs were just about done, I added big chunks of pineapple and heated them through. The warmth of the eggs combined with the sweet juiciness of the pineapple was the perfect combination. Not to mention, everyone loved it! I even caught Levi later sitting in the laundry room with the serving spoon licking every last morsel off the spoon. Yep, that good.
Lunch was a goodie combined with an oldie. I had some leftover “shloam-shloam” slaw, and some of Applegate Farm’s beef hot dogs so I added a little more mayo and mustard, grilled up the hot dogs and voila! A fresh, light lunch that was absolutely devoured by my ravagingly always-hungry children. Success!
Dinner! I have been looking to dinner all day! Why? WHY??? Do you not see the picture? It’s MEATLOAF!!! You might be where I used to be, where the name meatloaf throws you for a loop, but trust me, this is a whole new meatloaf…and it’s good too! I call it Meatloaf “Cake”. Why? Because it has frosting! Another day, another dollar. Well, actually just another day. Did I mention I’m a stay-at-home mom? No dollars here people, just days. Days that I fill will happy children, good food, and a God that loves me more than I can even begin to comprehend.
Sigh…. I hope your Day 10 was as nice as ours. Keep up the healthy cooking and the healthy life.
