In my day to day, I get the question a lot: “How DO you get it all done?” My usual semi-sarcastic answer is, “Prayer, red bull, and one fast moving step at a time.” But for reals. How do I get it all done?!
I am a single, homeschooling, working mom who wishes there was another set of hands around this place and about 6.5 more hours of each day. I also have a child with type 1 diabetes and multiple members of my household with gluten sensitivities. Somehow, it *almost* all gets done, and one of the many tricks I have up my sleeve, is my Instant Pot.
I used to put meat in the fridge to defrost and then promptly forget about it for days, making for smelly meat and an impromptu drive through a fast food joint. With my instant pot, there isn’t a need for defrosting time! I’ve also had the issue where I put a breakfast casserole in the crockpot overnight or dinner while we’re out all day, and it over cooks, turns to mush, or burns on the edges. With my instant pot, those are issues of the past! Seriously, this is the BEST thing in my kitchen, besides me. Haha! Kidding.
Our home is a well oiled, squeaky machine with a weekly meal plan that is a total lifesaver. When I’m so exhausted at the end of the day that my brain takes off and goes for a mini-vaca, I need my meal plan to keep us on track and fed… and then I need my Instant Pot.
If you don’t already have one, I would say GET ONE… except for the glaring fact that they are pretty pricey. That’s where yours truly comes in. Me, and a few of my friends, are giving one away.
